Join Les Marchands as they continue their popular Passport Series, inspired by their appreciation of wine, passion for cuisine, and commitment to education, bringing remarkable wine-producing regions around the world to Santa Barbara. March and April feature Passport to Tuscany, an insider’s window to a centuries-old cuisine and a collection of wines prized all over the world. Tuscany is a personal favorite of Chef Weston; as one of his first international culinary destinations, his immersion there was fundamental to his growth as a young chef. The series offers guests a rotating menu of seasonal and regionally inspired dishes created by Chef Weston Richards. The food, along with excellent wine suggestions by Acme Hospitality Wine Director Hayden Felice, are influenced by the culture, ingredients, techniques and flavors that define each destination.

Chef Weston’s Passport to Tuscany menu emphasizes the simplicity that is central to Tuscan cuisine: legumes, bread, cheese, vegetables, mushrooms and fresh fruit. And honoring Tuscany’s love of olives, Chef Weston uses them as an integral ingredient to Italian cooking and a key to finishing off a dish with a drizzle of true extra-virgin olive oil. Wine Director Hayden Felice selects some of the finest Tuscan wines in Italy – from Chiantis to Brunello di Montalcinos and others to be featured and tasted with Chef Weston’s menus during the Passport to Tuscany.

 

Expect samplings of First of the Season Strawberry and Arugula Salad with House-Made Ricotta, Mint Pesto and Green Olive; House-Made Pappardelle with Green Garlic, Spring Peas, Lemon and Pecorino; Grilled Wagyu Steak with Herb French Fries, Truffle Cheese Sauce, Roasted Mushrooms and Salsa Verde; and Crispy Flatbread with Farmer’s Cheese, Prosciutto and Arugula.

 

A great selection of regional wines to complement Chef Weston’s dishes can be ordered by the glass, carafe and bottle, all of which express a true reflection of the region’s terroir. Wine Director Hayden Felice’s recommendations include Chianti Classico Reserva, 2011; Canalicchio di Sopra, Brunello di Montalcino, 2006; Felsina, Chianti Classico Riserva, Rancia, 1995; Istine, Chianti Classico, 2014; Lisini, Brunello di Montalcino, 2013; La Mormoria, Vernaccia di San Gimignano, 2016; Paterna, Terraio Bianco, 2017. Les Marchands features a specialty cocktail, Bottle ‘Aged’ Negroni for Two. Wine pricing ranges from $12-44 for by the glass and $48-192 for select bottles.
